A healthy breakfast without having to sacrifice bread…
I’ve recently started doing Kayla Itsine’s 12 week program..I was too curious not to–have you seen everyone’s results??–Anyway, I have been following a variation of her food guide, but for the most part I generally stick to a “clean” diet. In the meantime, I will be posting different quick food ideas & healthy swaps to get back on track for summertime.
This is one of my favorites this week, especially now that avocados are back in season! The key to this avocado-egg ensemble is Ezekiel bread. If you haven’t heard of it before, it is a flourless, protein source bread that tastes just as good as the real thing. It doesn’t contain any white sugars or processed carbohydrates (like most breads do) because it is made of all organic sprouted whole grains.
I think this is one of the healthiest bread options I have come across so far. I usually find Ezekial bread in the frozen section at most grocery stores. Of course, Whole Foods and other health food stores carry it, as well.
This is so quick and easy to make. I usually get an egg frying or start on some scrambled eggs, first. Once my eggs get going, I pop a piece of Ezekiel bread in the toaster since it’s kept frozen. Then, I cut open an avocado and scoop out about 1/4th. When my bread is ready, I mash the avocado into the bread and spread it evenly. I like to sprinkle a little salt and pepper on top. As soon as your eggs are done cooking, add them on top & violá! This is a nice balanced combination of protein, healthy fats, and good carbs to get your day going!
